On a busy night, turn to this quick one-pot pasta dinner. Serve with a bowl of berries and cream for dessert to cover all of your nutrition bases.

Ingredients

  • 8 ounce dried orecchiette pasta

  • 6 ounce cooked ham, diced (1 cup)

  • 4 cloves garlic, peeled and sliced

  • 2 tablespoon butter

  • 1 teaspoon blackened seasoning

  • 8 ounce torn mustard greens or kale leaves (8 cups)

  • ½ cup shaved Asiago or Parmesan cheese (about 2 oz.)

Directions

  1. In a 4-quart Dutch oven cook pasta according to package directions. Drain, reserving 1/4 cup of the pasta water. Set pasta aside.

  2. In the same Dutch oven cook ham over medium-high heat until browned, about 3 minutes. Add garlic, butter, and blackened seasoning; cook and stir 2 minutes more. Stir in pasta, reserved pasta water, greens, and cheese. Cook and stir until heated through and greens wilt.
