Nachos Verdes

Directions

  1. In a medium saucepan cook onion in hot butter over medium heat until tender. Stir in tomatoes, chile peppers, and cumin. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally.
  2. In a small bowl toss together Monterey Jack cheese and cornstarch. Gradually add cheese mixture to tomato mixture, stirring until cheese is melted. Gradually add cream cheese, stirring until cheese is melted and smooth. Heat through.
  3. On a large serving platter layer half of the chips, half of the New Mexican Green Chili, half of the cheese mixture, half of the avocado, half of the green onions, half of the sour cream, and half of the cilantro. Repeat layers.

Tip:

If the cheese mixture becomes too thick, thin with a few tablespoons of milk.
