Mustard-Rubbed Pork Loin with Rhubarb Sauce

Directions

  1. Preheat oven to 350 degrees F. Trim fat from meat. Score top and bottom of meat in a diamond pattern by making shallow diagonal cuts at 1-inch intervals. For rub, in a small bowl combine mustard, rosemary, salt, pepper, and garlic. Spread rub evenly over all sides of meat; rub in with your fingers.
  2. Place roast in a shallow pan. Roast for 45 to 60 minutes or until a thermometer registers 145 degrees F. Remove roast to a platter; cover with foil. Let stand while preparing rhubarb sauce.
  3. For rhubarb sauce, in a medium saucepan stir together rhubarb, sugar, orange juice, and vinegar. Bring to boiling; reduce heat. Simmer, covered, about 15 minutes or until rhubarb is very tender.
  4. To serve, slice roast and serve with warm rhubarb sauce.

Grilling directions:

For a charcoal grill, arrange medium coals around a drip pan. Test for medium-low heat above pan. Place meat on grill rack over drip pan. Cover and grill for 45 to 60 minutes or until an instant-read thermometer inserted in center of meat registers 145 degrees F. (For a gas grill, preheat grill. Reduce heat to medium-low. Adjust for indirect cooking. Grill as above, except place meat on a rack in a roasting pan; place pan on grill rack.) Remove meat from grill. Cover with foil; let stand while preparing rhubarb sauce.
