Ingredients

  • 1 6-8 pound cooked ham, rump half

  • ½ cup Dijon-style mustard

  • ¼ cup honey

  • ¼ cup snipped fresh parsley

  • 2 tablespoon packed brown sugar

  • 2 tablespoon snipped fresh chives

  • 2 tablespoon snipped fresh rosemary

  • ½ teaspoon ground black pepper

  • Fresh herbs (optional)

Directions

  1. Preheat oven to 325°F. Place ham on a rack in a shallow roasting pan. Insert an oven-going meat thermometer into center of ham. The thermometer should not touch bone.

  2. Bake for 1-1/2 to 2-1/4 hours or until thermometer registers 140°F.

  3. Meanwhile, for glaze, in a small bowl combine mustard, honey, parsley, brown sugar, chives, rosemary, and pepper. Brush ham with glaze during the last 20 minutes of baking. If desired, garnish with additional fresh herbs.

Tips

Like it hot? Add 1 to 2 tablespoons prepared horseradish to the glaze for some spicy heat. Serving just a few? Bake as many 1-inch-thick ham slices as you need, thinly coated with some of the glaze. Save the remaining glaze to spread on turkey or roast beef sandwiches.
