Bit-of-Chocolate Banana Muffins
- Grease six 2-1/2 inch muffin cups. Set muffin cups aside. In a small mixing bowl stir together the flour, baking powder, and salt. Set aside.
- In a medium mixing bowl beat the brown sugar and margarine or butter with an electric mixer on medium to high speed until light and fluffy. Add the banana, egg, and milk. Beat until combined. Add the flour mixture. Beat on low to medium speed just until combined. Fold the chocolate pieces into the batter.
- Spoon batter into the prepared muffin cups, filling each cup almost full. Bake in a 400 degree F oven for 15 to 18 minutes or until the muffin tops are golden. Remove muffins from muffin cups and cool slightly on a wire rack. Serve warm. Makes 6 muffins.
