Moroccan-Style Lentil Soup Mix

Directions

  1. For seasoning mix, in a small bowl stir together first eight ingredients (through cinnamon).
  2. In two pint canning or other glass jars (or cellophane bags) layer next five ingredients (through onion) and seasoning mix. Seal jars. Store in a cool, dry place up to 6 months.

To Make Soup

In a 4- to 6-qt. slow cooker combine one jar soup mix and 8 cups water. Cover and cook on low 4 to 6 hours or high 2 to 3 hours or until lentils are tender. If desired, stir in 3/4 cup chopped fresh cilantro before serving. Makes 9 cups.
