Ingredients

  • 1 ½ pound boneless pork loin chops, cut 1 inch thick

  • 2 teaspoon finely shredded lemon peel

  • 3 tablespoon lemon juice

  • 2 tablespoon olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano, crushed

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

  • 4 cup grape tomatoes (about 70)

  • 1 medium seedless cucumber, halved lengthwise and sliced crosswise

  • Fresh oregano leaves (optional)

  • 1 Recipe Fennel-Yogurt Dip

Fennel-Yogurt Dip

  • 1 cup plain Greek yogurt

  • ½ cup grated fennel

  • 1 tablespoon lemon juice

  • ½ clove garlic, minced

  • ½ teaspoon salt

  • Dash cayenne pepper

Directions

  1. Preheat broiler. Line a 15x10x1-inch baking pan with foil; set aside. Trim fat from meat. Cut meat into 1-inch pieces. Place meat in a large bowl.

  2. In a small bowl combine lemon peel, lemon juice, oil, garlic, dried oregano, salt, and pepper. Pour half of the lemon mixture over meat; toss to coat. Spread meat in the prepared baking pan.

  3. Broil 4 to 5 inches from the heat for 7 to 8 minutes or until meat is slightly pink in center (145°F), turning once. Drizzle with the remaining lemon mixture.

  4. On cocktail picks, thread one piece of meat, one tomato, and a piece of cucumber. If desired, garnish with fresh oregano. Serve with Fennel-Yogurt Dip.

Fennel-Yogurt Dip

  1. In a small bowl combine yogurt, fennel, lemon juice, garlic, salt, and cayenne pepper. Cover and chill until ready to serve.
