Mini Souvlaki Skewers with Fennel-Yogurt Dip
Preheat broiler. Line a 15x10x1-inch
baking pan with foil; set aside. Trim fat from meat. Cut meat into 1-inch pieces. Place meat in a large bowl. In a small bowl combine lemon peel, lemon juice, oil, garlic, dried oregano, salt, and pepper. Pour half of the lemon mixture over meat; toss to coat. Spread meat in the prepared baking pan.
Broil 4 to 5 inches from the heat for 7 to 8 minutes or until meat is slightly pink in center (145 degrees F), turning once. Drizzle with the remaining lemon mixture.
On cocktail picks, thread one piece of meat, one tomato, and a piece of cucumber. If desired, garnish with fresh oregano. Serve with Fennel-Yogurt Dip.
In a small bowl combine yogurt, fennel, lemon juice, garlic, salt, and cayenne pepper. Cover and chill until ready to serve.
