Mini Apple Crisp Bites

Directions

  1. Preheat oven to 350 degrees F. Grease twenty-four 1 3/4-inch muffin cups; set aside.
  2. For apple filling, in a medium saucepan combine chopped apples, apple juice, granulated sugar, and 1/4 teaspoon apple pie spice. Bring to boiling; reduce heat. Simmer, uncovered, for 5 to 8 minutes or until apples are tender. Remove from heat.
  3. In a food processor combine flour, 1/4 cup of the oats, the brown sugar, and 1/4 teaspoon apple pie spice. Cover and process to combine. Add butter; cover and process until mixture looks like coarse crumbs. Stir in the remaining oats and the pecans. Place a rounded tablespoon of mixture in each muffin cup, pressing onto the bottoms and up the sides of the cups (patch any holes with additional crust mixture). There will be crust mixture left for topping.
  4. Place about 2 teaspoons apple filling in each crust-lined muffin cup. Sprinkle filling with the remaining oat mixture until very full.
  5. Bake 15 to 20 minutes or until golden brown. Cool 10 minutes. Loosen edges with a thin spatula. Remove from cups. Serve warm and, if desired, topped with whipped cream and apple pieces.

Whenever I read the recipes, they never distinguish between actual fillings and THEN the toppings etc..Everything is run together. Example to use:

Ingredients then below TOPPING ingredients

It takes too long to decipher the recipe, consequently, have gone to other Websites for easier instructions and have been baking for 65 years..Recipes are interesting, but would think for newcomers in cooking etc., would be difficult...Thank you....
