Mexican Fruit Cups with Honey-Lime Syrup

Directions

  1. Divide pineapple and papaya among glasses or plastic cups. Thread strawberries onto four 4-inch wooden skewers; add to glasses.
  2. In a small bowl combine lime juice, honey, cilantro, and ground ancho pepper. Drizzle over fruit. If desired, sprinkle with coconut. Serve immediately or cover and chill up to 4 hours.

I remember, many years ago, ditching school and driving across the boarder. This type of fruit platter was, always lunch. Over the years I have made many of these using a variety of fruits and powders! Always toasted coconut!! The platters are beautiful and easy for summer time on the patio, or, on the sand!raf
