Melty Snowman Cupcake

Directions

  1. Press a vanilla wafer cookie vertically into the top of each cupcake as far as it will go. Place frosting in a small microwave-safe bowl and microwave on high for 15 seconds, stirring every 5 seconds, until a thick drizzling consistency is reached. (If frosting melts to much, let it stand at room temperature to firm up slightly.) Carefully spoon frosting over cupcakes and wafers to coat, allowing some to drip down the sides.
  2. For hats, place chocolate and shortening in a separate small microwave-safe bowl. Microwave on high for 1 minute, stirring after 30 seconds, until melted and smooth. Dip cookie halves into melted chocolate, letting excess drip off. Place on a sheet of waxed paper; immediately top with a miniature chocolate peanut butter cup. Chill until firm.
  3. Meanwhile, place remaining chocolate in a resealable plastic bag. Snip a small hole from one corner. Add dots of melted chocolate to wafer heads for eyes, and place an orange jimmy sprinkle on each cupcake for nose. Once set, place hats near heads on each cupcake.
