1 cup spread


  • 3 tablespoon light sour cream

  • 2 teaspoon snipped fresh mint

  • 1 garlic clove, minced

  • 1 5-6 ounce pouch skinless, boneless pink salmon

  • cup red sweet pepper, diced

  • Whole wheat or whole grain crackers


  1. In a bowl stir together sour cream, mint, and garlic. Fold in salmon and sweet pepper. Cover and chill 2 to 24 hours. Stir before using. If desired, sprinkle with additional snipped fresh mint. Serve with crackers.
