Mediterranean Mini Meat Loaves with Broccolini

Directions

  1. Preheat oven to 350 degrees F. Coat a 15x10-inch baking pan with cooking spray. In a large bowl combine egg, 1/2 cup of the bread crumbs, 1/4 cup of the basil, the roasted pepper, tomato sauce, 2 Tbsp. of the parsley, the salt, and fennel seeds. Add ground beef; mix well. Shape mixture into four oval loaves. Arrange in one half of prepared baking pan. Bake 30 minutes.
  2. Meanwhile, remove 1/2 tsp. zest from lemon half. In a small bowl combine remaining 1/4 cup bread crumbs and basil, remaining 2 Tbsp. parsley, lemon zest, and 1 tsp. of the oil. In a large bowl toss broccolini with remaining 2 tsp. oil.
  3. Place broccolini in other half of pan. Top meat loaves with crumb mixture. Bake 15 minutes more or until a loaf registers 160 degrees F and broccolini is crisp-tender. Squeeze juice from lemon half over broccolini.

Tip

The internal color of a meat loaf or meatball is not a reliable doneness indicator. A beef meat loaf or meatball cooked to 160 degrees F is safe, regardless of color. To measure the doneness of a meat loaf, insert an instant-read thermometer into the center of the loaf.
