As far as fall dinner ideas go, this veggie-filled dish is one of our favorites! This 20 minute dinner recipe is loaded with artichoke hearts, lentils, and cucumber, making it a great autumn recipe.

Mediterranean Lentils

Directions

  1. Strain artichoke hearts over a small bowl, reserving liquid.
  2. In a large bowl stir together lentils and parsley. Add 1/4 cup of the reserved artichoke liquid (if necessary, add additional liquid to generously coat the lentils). Stir in artichoke hearts, cucumber, and tomatoes. Season to taste with salt and pepper. Spoon into serving bowls; top with feta cheese.

Had this tonight for Meatless Monday. I just cooked 2 cans of lentil soup and drained it. (That's what I had on hand). Skipped the reserved liquid from the artichoke hearts. It wasn't needed. This was tasty, filling and super quick!. Will make again!
