Directions

  1. Score ham by making diagonal cuts in a diamond pattern. Insert cloves into the scored intersections in the ham. Place ham on a rack in a shallow roasting pan. Insert a meat thermometer into the thickest portion of the ham without touching any fat or bone. Bake in a 325 degree F oven until thermometer registers 125 degrees F (about 1-1/4 to 1-1/2 hours for the rump half, 1-3/4 to 2 hours for the shank portion).
  2. Meanwhile, for the glaze, combine jelly, mustard, lemon juice, and ground cloves in a small saucepan. Cook and stir over medium heat until jelly has melted. Set aside half of the glaze to pass around the dinner table with ham. Brush some of the remaining glaze over ham. Bake for 20 to 30 minutes more or until thermometer registers 135 degrees F, brushing with glaze occasionally. Let ham stand for 15 minutes before carving. (The temperature of the ham will rise 5 degrees during standing.) Serve with reserved glaze. Makes 16 to 24 servings.
