Savory pie recipes are a great way to ensure a few leftovers the next day. This meat and potato pie serves six, so there’ll be enough for seconds, or to store in the fridge for tomorrow.
In a large skillet cook ground beef, onion, and mushrooms until meat is brown and onion is tender. Drain off fat. Stir in gravy, dried parsley, garlic powder, paprika, salt, and pepper. Heat through.
Grease a 9-inch pie plate. Spread half of the mashed potatoes in the bottom and up side of prepared pie plate. Spoon ground beef mixture over potatoes in pie plate. Top with remaining mashed potatoes. Bake, uncovered, in a 350 degree F oven about 30 minutes or until heated through. Sprinkle with snipped fresh parsley. Makes 6 servings.
