  • In a large skillet cook sausage, onion, and sweet pepper until meat is brown and vegetables are tender; drain. Transfer to a large bowl. Add corn and parsley. Stir in remaining 2 cups stuffing mix. Transfer to a greased 2-quart casserole. Sprinkle the buttered stuffing mix over top.
