Directions

  1. Combine apple, apricots, raisins, chives, and cardamom. Trim fat from meat. Season with salt and pepper, if desired. Make a pocket in each chop by cutting horizontally into the chop from the fat side almost to the bone. Spoon fruit mixture into each pocket. If necessary, securely fasten the opening with water-soaked wooden toothpicks. Combine marmalade and sherry or orange juice.
  2. Arrange preheated coals around a drip pan in a covered grill. Test for medium heat above pan. Place chops on grill over drip pan. Cover and grill for 35 to 40 minutes or until juices run clear, brushing occasionally with marmalade mixture during the last 10 minutes of grilling. Makes 6 servings.
