  • In a bowl stir together the mayonnaise or salad dressing, chutney, and curry powder; set aside.

  • Spread peanut butter on four of the bread slices. Top with roast beef or pork. Spoon curry mixture on meat; top with tomato, lettuce, and remaining slices of bread. Makes 4 servings.


You can use leftover roast beef or pork in the sandwich instead of the deli slices. Chop the roast into bite-size pieces and combine with some of the mayonnaise mixture before assembling sandwiches. If desired, use the sandwich filling in pita bread halves.
