In extra-large bowl, combine beef, pork, and ham until well mixed. Stir together 1 cup of the cracker meal, the salt, onion powder, pepper, and cumin; knead into meat mixture. Beat 3 of the eggs; knead into meat mixture. Divide meat mixture in half.
Beat remaining eggs; place in a shallow rectangular pan or other container. Place remaining cracker meal in another shallow rectangular pan or other container. Shape each half of meat mixture into a log about 10 inches long. Roll logs in eggs and then in cracker meal.
Wrap each log tightly in foil, twisting ends to seal. Place logs in a roasting pan. Pour water into pan to reach halfway up sides of the logs. Bake in a 350 degree F oven for 1-1/4 to 1-1/2 hours or until instant-read thermometer registers 160 degrees F when inserted in centers of meat logs.
Remove from water; cool slightly. Unwrap; wrap in clean foil. Cover and chill in refrigerator for at least 8 hours or overnight. Slice thinly. Serve with mustard. Makes 2 logs (20 appetizer servings).
