Directions

The day before:

  1. In a small bowl combine yeast and the warm water. Let stand for 5 minutes. In a large bowl combine 2 1/2 cups of the flour and the salt. Make a well in the center of the flour mixture; add yeast mixture, oil, herb, and honey. Stir to combine. Turn out dough onto a floured surface. Knead in enough of the remaining flour to make a soft dough that is almost smooth and elastic (3 to 5 minutes total). Shape dough into a ball. Place in a lightly greased bowl, turning to grease surface of dough. Cover and let rise in a warm place until double in size (about 1 hour). Punch down dough and use as directed.
