This adorable mini pie recipe can be made with the lid from a mason jar! With only a few ingredients, this easy pie recipe can be ready in a snap.

Ingredients

  • 1 14.1 ounce package refrigerated pie crusts

  • 2 tablespoon blueberry or blackberry jam

  • 2 tablespoon blueberries

  • 1 egg, lightly beaten

  • 1 tablespoon water

  • Coarse sugar (optional)

Directions

  1. Preheat oven to 375°F. Unroll pie rounds. Using a 4 1/2-inch circle cutter, cut 4 circles out of each pie round; discard scraps or save for another use.

  2. Ease 4 of the circles into four 3 1/2-inch large mouth lids. Fill pies with jam and fruit. Lay remaining 4 circles on top of fruit. Use your fingers to fold pastry under, even with the edge the lid. Crimp edges using your fingers or a fork. In a small bowl combine egg and 1 tablespoon water. Lightly brush pies with egg mixture. If desired, sprinkle pies with coarse sugar.

  3. Bake for 25 minutes of until crust is nicely golden and filling is bubbly. Cool completely before unmolding.
