In a 1 1/2-quart microwave-safe casserole combine cauliflower and the water. Cover with vented plastic wrap. Microwave on 100% power (high) for 12 to 15 minutes or until cauliflower is very tender, stirring once.
Add cheese and butter to cooked cauliflower. Mash with a potato masher or beat with an electric mixer on low speed until almost smooth. If desired, sprinkle with parsley, additional cheese, and/or paprika.
