Mascerated Grapefruit with Pistachios and Pomegranate
In a small bowl combine grapefruit juice, honey, and coriander. Mix well and set aside.
With a sharp knife, remove skin and white membrane from grapefruits. Slice grapefruits crosswise into 1/4-inch-thick rounds. Transfer slices to a large wide-mouth jar; add the grapefruit juice mixture. Cover and chill for at least 1 hour or up to 5 days.
To serve, divide grapefruit slices among four shallow bowls; pour liquid over slices. Top individual servings with pistachio nuts and pomegranate seeds. Serve immediately.
