Place cheese pieces, orange slices, thyme, and pepper in a wide-mouth pint canning jar. Add olive oil to cover cheese. Cover and chill 4 hours or up 3 days. Let stand at room temperature for 1 hour before serving.
To serve, place cheese and orange slices on a serving platter. Top with tomatoes, fresh thyme sprigs, and almonds. Drizzle with some of the oil. (Use remaining oil for salad dressing or serving with bread.)
