Maple-Sriracha Brined Pork Chops

Directions

  1. For brine, in a large pot combine the first seven ingredients (through peppercorns), stirring to dissolve salt. Add ice; let stand until ice is melted. Add chops. Cover and chill overnight.
  2. Preheat oven to 350 degrees F. Remove chops from brine and pat dry; discard brine. Sprinkle chops with ground pepper.
  3. In an extra-large oven-going skillet heat oil over medium-high heat. Add chops; cook 6 minutes or until browned, turning once. Transfer skillet to oven.
  4. Bake 14 to 17 minutes or until an instant-read thermometer inserted in chops registers 145 degrees F. Cover and let stand 5 minutes before serving.
