Make-It-Mine Greek Frozen Yogurt

Ingredients

  • 3 cup plain Greek low-fat (2%) yogurt

  • 1 cup sugar

  • ¼ cup freshly squeezed lemon juice

  • 2 teaspoon vanilla

  • teaspoon salt

Directions

  1. In a medium bowl combine the yogurt, sugar, lemon juice, vanilla, and salt. Whisk until smooth.

  2. Freeze the yogurt mixture in a 1 1/2- to 2-quart ice cream maker according to the manufacturer's directions. Transfer to an airtight container and freeze for 2 to 4 hours before serving. Let stand at room temperature for 5 to 15 minutes before serving.

Strawberry

Add 1 cup sliced strawberries during the last minute of mixing in the ice cream maker. Per serving: 86 calories, 4 g protein, 16 g carbohydrate, 1 g total fat (1 g sat. fat), 3 mg cholesterol, 0 g fiber, 15 g total sugar, 1% Vitamin A, 11% Vitamin C, 35 mg sodium, 5% calcium, 0% iron

Berry

Add 1 cup blueberries, blackberries, and/or raspberries during the last minute of mixing in the ice cream maker. Double Vanilla

Omit lemon juice. Split 1 to 2 vanilla beans lengthwise; scrape seeds from beans. Stir the seeds into yogurt mixture before freezing in the ice cream maker. Raspberry Fudge

Swirl in 1/4 cup raspberry preserves and 1/4 cup chocolate-flavored syrup before placing in the airtight container and freezing.
