Make-Ahead Green Bean Salad

Steam green beans then toss with plenty of fresh mint, sliced almonds, and a super-simple red wine vinaigrette for a refreshing twist on the picnic favorite three-bean salad.

  • 12 ounce green beans, trimmed

  • ¼ cup sliced almonds, toasted

  • 2 tablespoon chopped fresh mint

  • 3 tablespoon Mom's Vinaigrette

Mom's Vinaigrette

  • ½ cup red wine vinegar

  • 1 tablespoon Dijon-style mustard

  • 2 cloves garlic, minced

  • 1 cup extra-virgin olive oil

  • Kosher salt and freshly ground black pepper


  1. Steam green beans 7 minutes or until crisp-tender. Top with almonds and mint. Drizzle with Mom’s Vinaigrette.

Mom's Vinaigrette

  1. In a small bowl whisk together vinegar, mustard, and garlic. While whisking, slowly add the olive oil until the vinaigrette is emulsified. Season with salt and pepper. Store in an airtight container for up to 1 month in the refrigerator.

Refrigerate cooked green beans in an airtight container up to 3 days. Dress before serving.
