Lime-Macaroon Bars

Lime-Macaroon Bars
Directions
- Preheat oven to 350 degrees F. Line a 13x9-inch baking pan with foil, extending the foil over the edges of the pan. Lightly coat foil with cooking spray. Set pan aside. Remove 1 Tbsp. zest and squeeze 3 Tbsp. juice from the limes. Set zest and juice aside.
- For crust, in a large bowl beat butter with a mixer on medium 30 seconds. Add sugar, baking powder, salt, and the lime zest. Beat until light and fluffy, scraping bowl as needed. Beat in the 3 eggs, vanilla, and the lime juice until combined. Beat in flour. Spread batter evenly in the prepared pan. Bake about 15 minutes or until set and dry. Remove from oven.
- Meanwhile, in a large bowl combine the egg white, coconut, and condensed milk. Spoon coconut mixture evenly over hot crust. Bake about 25 minutes more or until topping is golden brown. Cool bars in pan on a wire rack. Use edges of foil to lift uncut bars out of pan. Place on a cutting board. Cut into bars.

Layer bars between sheets of waxed paper in an airtight container; cover. Store in the refrigerator for up to 3 days or freeze for up to 3 months.
