Lime-Glazed Pork Tenderloin and Roasted Vegetables

Lime-Glazed Pork Tenderloin and Roasted Vegetables

Directions

  1. Preheat oven to 425 degrees F. Coat a shallow roasting pan with cooking spray. Place a small rack in prepared pan. Arrange carrots, mushrooms, and onion around rack. Roast 10 minutes. Place meat on rack; roast 15 minutes more.
  2. Meanwhile, for glaze, remove 1 tsp. zest and squeeze 1/4 cup juice from limes. In a small bowl whisk together lime zest and juice and remaining ingredients. Brush glaze over meat and drizzle over vegetable; stir vegetables to coat.
  3. Roast 10 to 17 minutes more or until meat registers 145 degrees F and vegetables are tender, stirring vegetables once. Remove from oven. Let stand, covered, 3 minutes before slicing meat.
