Lime Bars

Directions

  1. Preheat oven to 350 degrees F. Line a 13x9-inch baking pan with parchment paper or foil, extending parchment or foil over edges. For crust, in a large bowl stir together the 2 cups flour and powdered sugar; add butter. Beat with a mixer on low to medium just until mixture begins to cling together. Press onto bottom of prepared baking pan. Bake 25 minutes or until light brown.
  2. Meanwhile, for filling, remove 1 tablespoon zest and squeeze 1/3 cup juice from limes. In a medium bowl combine lime zest and juice and remaining ingredients. Spread over hot crust.
  3. Bake 20 minutes more or until edges begin to brown and center is set. Cool in pan on a wire rack. Using parchment or foil, lift cookies out of pan. Cut into bars. Before serving, sprinkle with additional powdered sugar.
