Lightened-Up Traditional Corn Casserole

Directions

  1. Preheat oven to 325 degrees F. Generously coat a 2-quart rectangular baking dish with cooking spray.
  2. In a large bowl combine crushed crackers, sugar, salt, and pepper. Stir in milk, egg, and melted butter. Stir in frozen corn.
  3. Pour corn mixture into the prepared baking dish. Bake for 1 to 1 1/4 hours or until a knife inserted near the center comes out clean. If desired, sprinkle with parsley.
