Lemon-Spice Cupcakes

Directions

  1. Preheat oven to 350 degrees F. Line twenty-four 2-1/2-inch muffin cups with paper bake cups; set aside. Prepare cake mix according to package directions for cupcakes. Spoon batter into prepared cups, filling each about 1/2 to 2/3 full. Bake according to package directions. Cool 5 minutes. Remove from cups and cool completely.
  2. For frosting, stir together cream cheese frosting and apple pie spice. Spread over each cupcake. Use a serrated knife to cut each cookie in half. Insert the cut side of each cookie half into a cupcake.
