Lemon-Pepper Air-Fryer Shrimp and Veggies

Ingredients

  • 10 ounce fresh or frozen extra-large shrimp in shells, thawed if frozen, peeled, and deveined

  • 2 lemons

  • 1 tablespoon olive oil

  • 1 teaspoon salt-free lemon-pepper seasoning, such as Mrs. Dash

  • ¼ teaspoon salt

  • ¼ teaspoon garlic powder

  • ¼ teaspoon paprika

  • 1 small zucchini, halved lengthwise and sliced 1/4 inch thick

  • 2 medium carrots, sliced

Directions

  1. Thaw shrimp if frozen. Rinse shrimp; pat dry. Preheat air fryer at 400°F.

  2. Squeeze 3 Tbsp. juice from one of the lemons; cut the remaining lemon into wedges. In a large bowl combine lemon juice and the next five ingredients (through paprika). Add shrimp, zucchini, and carrots; toss to coat.

  3. Using a slotted spoon, transfer shrimp mixture to air-fryer basket. Cook 9 to 11 minutes or until shrimp are opaque, stirring occasionally. Serve with lemon wedges.
