Rinse shrimp; pat dry. Preheat air fryer at 400°F. Squeeze 3 Tbsp. juice from one of the lemons; cut the remaining lemon into wedges. In a large bowl combine lemon juice and the next five ingredients (through paprika). Add shrimp, zucchini, and carrots; toss to coat.
