Lemon Grass Beef and Rice Stew
- Place steak, lemongrass, garlic, ginger, crushed red pepper, soy sauce, lime juice, beef broth and carrots in a 4-quart slow cooker. Cook on high heat setting for 4 hours.
- Remove lemon grass stalks and and stir in the 2 cups of instant brown rice, jicama and cauliflower and broccoli florets. Replace lid and continue to cook on high heat setting for 30 minutes more, stirring once.
