King Ranch Crunch Chicken Casserole


There are lots of flavors to get excited about in this easy chicken recipe: Zesty salsa verde, gooey cheddar cheese, and crunchy tortilla chips are just the start. Even better, this dump and cook chicken dinner takes barely any prep time.

  • 1 8 ounce package cream cheese, softened

  • 1 16 ounce jar salsa verde

  • 3 cup shredded cooked chicken

  • 2 4 ounce cans diced green chiles, undrained

  • ½ cup finely chopped onion

  • cup chopped cilantro

  • 3 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 8 cup tortilla chips, broken, if desired

  • 2 cup shredded cheddar cheese (8 oz.)


  1. Grease a 3 1/2- to 4-quart slow cooker. In a large bowl stir together cream cheese and salsa verde until combined. Add the next 6 ingredients (through cumin); stir until combined.

  2. Layer one-fourth of the tortilla chips in the bottom of prepared cooker. Top with one-third of the chicken mixture and 1/2 cup cheese. Repeat layers twice.

  3. Cover; cook on low 4 hours or on high 2 hours, turning the crock liner halfway through cooking, if possible. Remove crock liner from cooker, if possible. Top with remaining cheese and chips. Let stand 5 minutes or until cheese melts.
