Kale Salad with Dates

Directions

  1. Rinse and dry the kale and place in a large salad bowl. Pour 3 tablespoons lemon juice and 1/4 teaspoon of the salt over the kale and massage the leaves gently for 4 to 5 minutes to tenderize them.
  2. Combine the olive oil, shallot, honey, 2 tablespoons lemon juice, remaining salt, and crushed red pepper in a screw-top jar. Shake well.
  3. Toss kale with the pecans, apple, cheese, and dates. Add dressing and toss to coat.
