Directions

  1. Arrange lettuce leaves on six salad plates. Arrange red onion slices on top of lettuce. Divide jicama, sweet pepper, and carrot strips among the plates.
  2. For dressing, in a screw-top jar combine orange peel, orange juice, oil, cilantro, cumin, salt, and black pepper. Cover and shake well. Drizzle dressing over salads.

Make-Ahead Directions:

Prepare the dressing as directed in Step 2. Cover and chill for up to 2 days. Cut up onion, jicama, sweet pepper, and carrot. Place in separate storage containers and chill for up to 24 hours. Assemble as directed.
