Jerk Marinade

Flatten some chicken breasts and marinate for up to 3 hours. Grill for 4 minutes (turning once) and you've got a delicious jerk chicken dinner.

about 1/3 cup (eoungh for 1 pound chicken)

Ingredients

  • ¼ cup unsweetened pineapple juice

  • 2 tablespoon olive oil

  • 6 cloves garlic, minced

  • 1 tablespoon Jamaican jerk seasoning

  • ¼ teaspoon salt

Directions

  1. In a small bowl stir together pineapple juice, oil, garlic, jerk seasoning, and salt.

  2. To use, pour marinade over chicken in a resealable plastic bag set in a shallow dish. Seal bag; turn to coat chicken. Marinate in the refrigerator for 30 minutes to 3 hours, turning bag occasionally. Drain chicken, discarding marinade.
