Ingredients

  • 4 cup 1/2-inch pieces peeled sweet potatoes

  • 2 ¼ cup reduced-sodium chicken broth

  • 1 15 ounce can reduced-sodium black beans, rinsed and drained

  • 1 12 ounce pkg. cooked smoked chicken sausage links with mango and jalapeño or with habanero and green chile, cut diagonally into 3/4-inch slices

  • 1 cup dried orzo pasta

  • 1 cup frozen whole kernel corn, thawed

  • 2 tablespoon butter, melted

  • 1 ½ - 2 teaspoon Jamaican jerk seasoning

  • ½ teaspoon dried thyme, crushed

  • ½ cup sliced green onions

  • Fresh cilantro leaves

  • Lime wedges

Directions

  1. Preheat oven to 375°F. In a 3-qt. rectangular baking dish combine first nine ingredients (through thyme). Bake, covered, 1 hour. Bake, uncovered, 15 minutes more or until liquid is absorbed and potatoes and orzo are tender.

  2. Let stand 15 minutes before serving. Sprinkle with green onions and cilantro and serve with lime wedges.
