Handling Hot Peppers

* Because hot chile peppers contain volatile oils that can burn your skin and eyes, avoid contact with chiles as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the chile peppers, wash your hands well with soap and water.

3 stars because I wasn't impressed, but a couple guests were & wolfed them down! Not hard to make. I thought the poppers themselves were tasty, but the salsa was underwhelming, even after seasoning w/more salt & pepper. The bell pepper overshadowed the peach. I should have used 2 jalapeños instead of 1. I'd make these again substituting jarred salsa.
