Italian Wild Rice and Farro Soup Mix with Wild Mushrooms

Directions

  1. For seasoning mix, in a small bowl stir together first five ingredients (through thyme).
  2. In two pint canning or other glass jars (or cellophane bags) layer next six ingredients (through onion) and seasoning mix. Seal jars. Store in a cool, dry place up to 6 months.

To Make Soup

In a 4- to 5-qt. slow cooker combine one jar soup mix and 8 cups water. Cover and cook on low 7 to 8 hours or high 3 1/2 to 4 hours or until wild rice and farro are tender. If desired, stir in 2 cups chopped cooked chicken and/or packed fresh baby spinach the last 10 minutes of cooking. Makes 9 cups.
