Preheat oven to 400 degrees F. In a large skillet cook sausage and carrots until sausage is brown and carrots are just tender, using a wooden spoon to break up meat as it cooks. Drain off fat. Stir green beans, Alfredo sauce, and the 2 teaspoons Italian seasoning into meat mixture in skillet. Heat through. Stir in mozzarella cheese.
Transfer meat and vegetable mixture to a greased 2-quart casserole or baking dish. Cut each biscuit into quarters; arrange biscuit pieces over filling.
Brush biscuits lightly with milk and, if desired, sprinkle with additional Italian seasoning and/or Parmesan cheese. Bake, uncovered, about 30 minutes or until golden brown and bubbly. Let stand for 20 minutes before serving.
