Ingredients

  • 2 tablespoon vegetable oil

  • 2 10 ounce packages frozen chopped spinach, thawed and squeezed dry

  • 2 cloves garlic, minced

  • Salt

  • Coarsely ground black pepper

  • 1 16 ounce jar salsa

  • 8 eggs

Directions

  1. In a large skillet heat oil over medium heat. Add spinach and garlic; cook until heated through. Season to taste with salt and pepper. Remove spinach mixture from skillet; keep warm.

  2. Return skillet to heat; add salsa and increase heat to medium-high. Break an egg into a small bowl and gently add to the simmering salsa; repeat with the remaining 7 eggs. Gently simmer, covered, until egg whites are set and yolks are desired doneness (about 3 minutes for runny yolks and about 5 minutes for hard yolks).

  3. To serve, divide the spinach mixture among four serving plates or shallow bowls, forming a spinach nest on each plate or bowl. Spoon two of the eggs and 1/4 of the salsa into each nest. If desired, sprinkle with additional pepper.
