Line a shallow baking pan with parchment paper. In a medium bowl stir together first five ingredients (through cinnamon) until combined. Add pepitas and oats. Stir to coat. Using wet hands, pat mixture into a 12x10-inch rectangle in prepared pan. Bake 30 to 35 minutes or until golden. Cool in pan on a wire rack. Break mixture into 2-inch pieces. Store in an airtight container at room temperature up to 1 week or freeze up to 2 months.
