Honey Chipotle Chicken Meal Kit

Ingredients

  • 6 bone-in chicken thighs, skin removed

  • 2 cup packaged peeled baby carrots

  • 1 cup onion wedges

  • 2 canned chipotle peppers in adobo sauce, chopped

  • 2 tablespoon honey

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ cup chicken broth

  • 2 cup hot cooked grain, such as rice, brown rice, or quinoa

  • Hot honey or honey (optional)

Directions

  1. Place chicken in a 1-gal. resealable plastic bag or an airtight container. Add next seven ingredients (through black pepper). Store in refrigerator up to 3 days.

  2. In a 3 1/2- or 4-qt. slow cooker combine chicken mixture and broth. Cover and cook on low 6 to 8 hours. Skim off fat.

  3. Serve chicken mixture over grain. If desired, drizzle with hot honey.
