Homemade Microwave Mac and Cheese

Ingredients

  • Nonstick cooking spray

  • cup dried elbow macaroni pasta

  • cup water

  • Pinch of salt

  • cup milk

  • cup finely shredded mild cheddar cheese

Directions

  1. Combine pasta, water and salt in a wide 14- to 16-ounce microwave-safe mug or bowl. Microwave on high 4 ½ - 5 minutes, stirring once or twice during cooking. Add milk and half of the cheese, stir and microwave 1 minute more. Add remaining cheese and stir. Garnish with additional cheese, if desired. Let stand 1 to 2 minutes before serving.

Pizza variation

Cook pasta as directed above. Omit milk and cheddar cheese. Stir in 1/3 cup marinara sauce and top with 1/3 cup finely shredded Italian blend or mozzarella cheese. Heat as directed above. Do not stir. Garnish with chopped pepperoni, finely shredded basil and/or finely chopped parsley.
