Herbed Dijon-Marinated Veggies

Directions

  1. In a large bowl whisk together wine, basil, parsley, oil, thyme, mustard, garlic, and salt. Add mushrooms, tomatoes, sweet pepper, and zucchini; toss gently to coat. Cover. (To serve today, omit Step 2. Marinate vegetables at room temperature for 30 to 60 minutes, stirring occasionally. Continue as directed in Step 3.)
  2. Marinate in the refrigerator for at least 4 hours or up to 24 hours, stirring once or twice. Let stand at room temperature for 30 to 60 minutes before serving.
  3. Using a slotted spoon, transfer vegetables to a serving bowl.
