Herb-Marinated Veggies

Directions

  1. In a large bowl whisk together the first eight ingredients (through salt). Add mushrooms, tomatoes, sweet pepper, and zucchini; toss gently to coat.
  2. Marinate at room temperature for 30 to 60 minutes, stirring occasionally.
  3. Using a slotted spoon, remove vegetables to a serving bowl.
