Only 10 minutes of prep (seriously, we're working with a vegan dump dinner here!) and a few hours in your slow cooker until your chowing down on some vegan comfort food in the form of this gumbo recipe.
2 15 ounces black beans, rinsed and drained
1 28 ounce diced tomatoes, undrained
1 16 ounce frozen sweet pepper and onion stir-fry vegetables
2 cups frozen cut okra
2 – 3 teaspoons Cajun seasoning
3 cups hot cooked white or brown rice
Chopped green onions (optional)
In a 3 1/2-to 4 1/2-quart slow cooker combine beans, tomatoes, frozen stir-fry vegetables, frozen okra, and Cajun seasoning.
Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.
Serve gumbo in shallow bowls over hot cooked rice. If desired, sprinkle with green onions.
