Directions

  1. Preheat oven to 350 degrees F. Spread hazelnuts in a single layer in a 15x10x1-inch baking pan. Bake in the preheated oven about 10 minutes or until lightly toasted, stirring once. Place the warm nuts on a clean kitchen towel. Rub the nuts with the towel to remove the loose skins.
  2. Line a baking sheet with foil or waxed paper; arrange apricots on prepared baking sheet. Gently loosen edges of each apricot to open; insert a hazelnut into center of each apricot.
  3. Place semisweet chocolate in a small microwave-safe bowl. Microwave on 70 percent power (medium-high) about 1 minute or until melted and smooth, stirring every 15 seconds. Using a fork, dip 12 of the hazelnut-stuffed apricots, one at a time, into melted semisweet chocolate, turning to coat completely; gently tap fork on edge of bowl to let excess chocolate drip off into bowl. Return apricots to baking sheet. Set aside the remaining semisweet chocolate.
  4. Place white baking chocolate in another small microwave-safe bowl. Microwave on 70 percent power (medium-high) about 1 minute or until melted and smooth, stirring every 15 seconds. Using a fork, dip the remaining apricots, one at a time, into melted white baking chocolate, turning to coat completely; gently tap fork on edge of bowl to let excess white chocolate drip off into bowl. Place apricots on prepared baking sheet. Set aside the remaining white baking chocolate.
  5. Chill coated apricots on the baking sheet about 1 hour or until chocolate is set.
  6. Microwave the remaining semisweet chocolate on 50 percent power (medium) about 30 seconds or until drizzling consistency; drizzle over apricots coated with white chocolate.
  7. Microwave the remaining white baking chocolate on 50 percent power (medium) about 30 seconds or until drizzling consistency; drizzle over apricots coated with semisweet chocolate.
  8. Chill apricots on the baking sheet about 1 hour more or until chocolate is set. Store in an airtight container in a cool, dry place.
